I just retried it with
OpenOffice 1.1.4
as included in debian/sid (and sarge?)
OpenOffice 1.99.122
installed from rpm via alien (should work on sarge/etch too)
With fonts which look like this:
[~] ls -l /usr/local/share/fonts/psfonts/pop*
lrwxrwxrwx 1 norbert norbert 71 2005-04-09 17:14 /usr/local/share/fonts/psfonts/popb8a.afm -> /usr/TeX/font-collection/adobe-optima/fonts/afm/adobe/optima/popb8a.afm
lrwxrwxrwx 1 norbert norbert 73 2005-04-09 17:14 /usr/local/share/fonts/psfonts/popb8a.pfb -> /usr/TeX/font-collection/adobe-optima/fonts/type1/adobe/optima/popb8a.pfb
lrwxrwxrwx 1 norbert norbert 71 2005-04-09 17:14 /usr/local/share/fonts/psfonts/popm8a.afm -> /usr/TeX/font-collection/adobe-optima/fonts/afm/adobe/optima/popm8a.afm
lrwxrwxrwx 1 norbert norbert 73 2005-04-09 17:14 /usr/local/share/fonts/psfonts/popm8a.pfb -> /usr/TeX/font-collection/adobe-optima/fonts/type1/adobe/optima/popm8a.pfb
lrwxrwxrwx 1 norbert norbert 71 2005-04-09 17:14 /usr/local/share/fonts/psfonts/popr8a.afm -> /usr/TeX/font-collection/adobe-optima/fonts/afm/adobe/optima/popr8a.afm
lrwxrwxrwx 1 norbert norbert 73 2005-04-09 17:14 /usr/local/share/fonts/psfonts/popr8a.pfb -> /usr/TeX/font-collection/adobe-optima/fonts/type1/adobe/optima/popr8a.pfb
I.e., the pfb and afm files are *links* into *different* directories.
Outcome:
OpenOffice 1.1.4 does *NOT* find the fonts
OpenOffice 1.99.122 does find the fonts
So this is fixed in current devel version, but not in the original one.
Stupid as it may be.

YOu don't need a chroot. Get the install .tar.gz, unpack it, convert all
the rpms to debs with *keeping* the installation scripts, then install
all the debs PLUS the desktop-integration/blabla.deb. All goes to
/opt/openoffice-something, independent from you other installation.
Best wishes
