Have /etc/apt/sources.list point to etch not testing.

Then use aptitude interactively, hit 'u' to update the list.  If there's
updates available you'll see a tag for 'upgradable packages'.  Hit + on
this list to select them all.  Hit 'g' to go, and review the list of
what it wants to do.  Change anything you want then hit 'g' to do it.

That's it.  Interactivly so you see what's happening.
