I sounds to me like the VGA16 Framebuffer is loading at boot.  I have
this on one of my older laptops.  It doesn't matter what you set the
textmode to with "vga=...", this get's overriden by vga16fb which
loads shortly after the text mode is set and defaults to 80x30.

If this is the case, you can use fbset to manipulate the display, or
you can remove vga16fb from the kernel so it doesn't load.  To check
this, look in your /var/log/dmesg file for the vga16fb loading.
