"buster" isn't hard-coded in there. I just verified that.
I assume that perhaps somewhere in the process you were using something
other than the Debian ports mirror, which I think can lead to the
installer to offer a choice of Debian releases/distributions for
installation instead of automatically selecting Sid/unstable.
We are missing the point .. entirely.
No regular user would figure this stuff out.
But I've done "countless" installations for powerpc and ppc64 targets
when improving d-i/grub-installer and apart from the manual mirror
selection I didn't recognize any major obstacles during the installations.
So yes .. docs need to be written in a "modern" way and I am actually
doing videos also.... however it is frustrating.
Could you maybe create a list of points you consider:
* not working
...for a specific installer ISO (preferably the latest one, i.e.  at
the moment), so that we can work through this list and provide
additional documentation if need be in e.g. the Debian wiki.
