If you press F3 when booting the Knoppix CD, the info screen shows how
to set resolution. (knoppix screen=1280x800 depth=24).

I am sure Knoppix documentation has info on how to change that on an
already installed system, too.

In Debian it would be
  dpkg-reconfigure xserver-xfree86
but I have no idea if this works in Knoppix.

Perhaps asking your question in a Knoppix mailing list would make
sense?
