mature and stable it works well, but it can become frustrating if it
evolves quickly.

I want to second these, they are important points. And just to make sure its clear, it is also possible to do all of the above. If you pay attention to the Debian package versions and use all the tricks available, it is also possible to make all these release channels play nicely together.
