Well, keep the apache logs of any web interfaces you use re. subscribe
requests, that should cover it.  If the web interface itself doesn't log all
that info, that is.

If all subscriptions are done by email, keeping the entire subscription
exchange will also store all the required information (in the Received:
headers of *your* servers). Alternatively, you can also store the MTA
logs for these exchanges.

So you can do it even with majordomo.
