You can run lintian as a hook insider pbuilder after the build. Copy
/usr/share/doc/pbuilder/examples/B90lintian
to
/var/cache/pbuilder/hooks/
(if it is not already there), and put
HOOKDIR=/var/cache/pbuilder/hooks/
to your ~/.pbuilderrc
