The OP seems to have two requirements:

1. To run Debian Live with xfce desktop and clamav.

2. To have the most up-to-date packagae versions possible.

Personally I would forget about a customised Debian Live and follow
David's suggestion to install Debian on a USB stick. Unstable can be
installed to a stick with the mini.iso from
