/dev/sdb uses the same layout as /dev/sda.


Clear.


Mount new root into, say /mnt. Mount new boot into /mnt/boot.
Bind-mount /proc, /dev and /sys into /mnt/proc (/mnt/dev and /mnt/sys).
Chroot into /mnt.
Invoke 'update-initramfs -k all -u'.
Exit chroot, unmount everything.
Poweroff, remove unneeded disks, poweron.

That's the procedure I've used for this.
