This works in Lenny and is auto-detected.

This will work to capture from your input card:

cat /dev/video0 > test.mpg

I think it defaults to capturing from the coax input.  You can try the
various ivtv commands to change that.

Pitivi and Devede are pretty decent and simple for editing and authoring
dvd's.  So are most of the packages others have already mentioned.
