Use metacity's fullscreen mode. You will need to set up a keyboard shortcut using Desktop > Preferences > Keyboard Shortcuts. In this way you can toggle fullscreen mode for any application.
That did the trick! Thanks for the tip, Liam. Being able to put any application in full-screen mode will be a handy feature for teaching too.
