Hi Mitja,
to access the machines securly: ssh.
to block unwanted traffic: iptables.
to manage software: aptitude.
to check system activity: top.
to check network traffic: iptraf.
to check who is on: w, who.
to see what's happening: ps -A f.

remove any unneeded services: ftp, telnet, ...
