I recently had a similar problem, which was caused by a network card. It had (via ifconfig) a ~2% error rate on packets (it might not have helped that it was a 10mb/s nic and the other was 100mb/s). This caused NFS (over UDP) to behave similar to what you describe. I didn't try NFS over TCP, but I do wonder if it might help, aleast a little bit...

You could also try to "soft" mount the NFS share (but according to "man mount" it might not be a good idea)
