the path I described is not a scheme and is perfectly editable,
at least in my gnome2.8 which was originally from sid, but sync with
sarge now.

you can try to edit ~/.gconf/desktop/gnome/interface/%gconf.xml
while gnome or at least gconfd-2 is closed. 

a better way would be using gconftool-2 from command line.
