If you go with courier, make sure you increase the number of connections.  Several email readers have real heartburn if this is set to low.  I have set mine to 10.

Don't know if it's the "best", but I use courier-imap and
courier-imap-ssl.  Why? They supported what I wanted (Maildirs) and they
worked immediately after install.
