How about a simple hands off installer with the 7 CD set that 
doesn't autoconfigure or ask you how you want to configure but just 
installs a plain vanilla basic Debian with a terminal from which you 
can customize just those things you want?  You can do a lot of good 
things with 'tar' and 'apt' or even 'dselect'.

No, I don't have this installer but don't you wish there was such
a thing?  A no brainer installation with customization after Debian
is installed.  Heck, you could even install multiple Debians and
customize each one differently.
