Yes, you can, except we don't have source debs, just tarballs and
patches.  I don't know how to do source-only pinning, but if someone
else posts on how to get that set up, then you'd do...

apt-get -b build-dep packagename/testing (or replace testing with unstable)
apt-get -b source packagename/testing (or replace testing with unstable)
