Slim to none.  The data is as reliable as the machines which had
access to it.  If you trust the machines which put the headers there,
then you can trust the headers.

Trivial.  (except, as someone else said, for the last Received: header
which is added by your own machine.  No one else has control over how
your machine reports info)
