You can configure the virtual machine in virt-manager (only before the first boot) to use BIOS or UEFI. When you create a new virtual machine, select 'Customise configuration before install' before pressing 'Finish'. Look at 'Overview', 'Hypervisor Details', 'Firmware': Select either 'BIOS' for legacy boot using isolinux, 'UEFI' for non-secure boot or 'UEFI..OVMF_CODE_4M.ms.fd' for UEFI secure boot.
Both UEFI modes use grub.
