Thanks for the tip... it never would have occurred to me to dd any sort
of iso onto the stick directly! I should have paid more attention to
what's "hybrid" about these images in the manual (obvious on rereading
section 4.2 and 4.3.1 though).
I just dd-ed
  debian-squeeze-live-beta2-i386-rescue.iso 
onto a USB stick and that boots great.
