Yes, you're right. Ideally gconf-editor (b) should display all configuration items that it knows about, even for keys that are unset but exist in the schema for the application. This requires both gconf-editor supporting this *and* application schemas being correctly installed. If both of these conditions are satisfied, then using gconf-editor is fine for random tweaking of hidden prefs.

As sproctor said, if gconf-editor doesn't already do this then it's probably a bug or a valid feature request.

Still, given that you'd only use the command line tool for bulk and/or automated changes, you'd probably be working from documentation of some sort (the G2D SAG, posts on mailing lists, etc), thus the lack of visibility of hidden config items in this case IMHO isn't a problem.
