We've been using mapproxy productively for years and commission a lot of custom modifications.
If you're using the mapnik backend you'll need to reintroduce python-mapnik.
I finally lost my patience with that package. After 10 years there are still no proper tagged releases nor is it on PyPI. The pybind11 changes cause the import to fail and upstream is not responsive to the issues on GitHub.
