Chez moi /vmlinuz est un lien symbolique vers /boot/vmlinuz-* :
peut-être GRUB ne peut-il suivre les liens symboliques ?
Essaie avec /boot/vmlinuz-<version> (vérifie quel est le nom exact du
noyau que tu lances ; GRUB pratique la complétion : donc avec TAB, il
t'affichera les noms correspondants).
