A lowfat (aka diskless workstation) Linux client is a PXE booting Linux
installation with no local disk, fetching all files using NFS from a
server.

What would a lowfat Windows client be? Can Windows PXE boot the
operating system and load all files from a network share? I have no
idea, but believe the question is really if Windows can boot in a lowfat
fasion. If it can, Skolelinux can probably handle the server side. I
have no idea if anyone have tried it.
