Yes, I'm thinking about beginning with this, though most of the
packages I built existed in Debian, but not in the version I need
(especially for ffado things).
I admit in Debian Science we frequently discussed the problem of users
wanting to stick to very specific versions of some software. However,
there is no reasonable way inside Debian to do so and what in the Debian
Science scope is regarded as the "better" answer to the original user
problem to get perfectly reproducible data are well designed automatic
tests and there is currently some work into this direction done.
I personally do not know reasons why in multimedia field any specific
version of software might be needed - if Debian just has a to old
version this could be done in backports.

get any bug report "Please enable KDE" (just for example) everything is
fine. You could even test how honest the bug reporter is about this and
can ask for a patch. I do not say that you should create artifical
hurdles for such requests - but sometimes you have more thrilling things
to do than implementing a wishlist feature and it can be a prove of the
seriousness of the reporter if he is willing to provide a patch.
Hum, actually, in the Debian installer, you might chose to install a
desktop environment or not, and you can chose what desktop
environment you install, right?
I was thinking about something like this (but maybe less hidden into
submenus!)
I can not say for sure but if I remember right the only default choice
is "Desktop environment" (yes or no).
