I admit in Debian Science we frequently discussed the problem of users
wanting to stick to very specific versions of some software. However,
there is no reasonable way inside Debian to do so and what in the Debian
Science scope is regarded as the "better" answer to the original user
problem to get perfectly reproducible data are well designed automatic
tests and there is currently some work into this direction done.
I personally do not know reasons why in multimedia field any specific
version of software might be needed - if Debian just has a to old
version this could be done in backports.

I can not say for sure but if I remember right the only default choice
is "Desktop environment" (yes or no).

Yes for: Debian Edu has something that is worth looking at.
