linux-kernel-headers provides /usr/include/linux for compiling user
space programs. It has nothing to do with your running kernel and the
version doesn't really matter. The headers for compiling kernel modules
involves linux-headers-2.6.18 or similar.

Maybe your gdm is misconfigured since I think it should be /usr/bin/X
Assuming the X symlink is actually installed and pointing at Xorg. Is
xserver-xorg installed?
