Document the details of every system administration step you take.Always do this regardless of what OS you use (document on *paper*).
I keep paper receipts, licenses, COA's, keys, etc.. I use a networked version control system (CVS) for everything else -- create a project for each host, check it out on the host, check it out on an admin laptop, and add content as desired.
