The only times I put several PVs in a VG is when moving data between
disks:
- pvcreate /dev/sd<new>
- vgextend <myVG> /dev/sd<new>
- pvmove /dev/sd<old>
- vgreduce <myVG> /dev/sd<old>

But indeed, this creates a temporary mirror and is hence safe w.r.t
disk failure.
