It will, but you still have to use the very same UI to tell the 
installer how to use your partitions.

Things change. It could be useful if you

- mount /usr read-only (and remount rw only on package upgrades)
- want to encrypt / but not /usr (or /var)

Otherwise this separation in practice quite often results in either 
waste of space or too small partitions.
