Maybe it's an overkill for you but this one worked just fine for me:
http://workaround.org/ispmail/lenny
It is about setting up an mail environment based on a database so you
can easily add aliases and users without adding them to your system.
But it is about dovecot and postfix instead courier and postfix, but
maybe it will help you.
