Well that probably works, but I followed some links and ended up with
the information I needed to disable the use of X11 screen fonts that are
bitmapped (like Helvetica and Times) and thus scale badly (since by
default scaling is used) 

By doing

cd /etc/fonts/conf.d
sudo ln -s ../conf.avail/70-no-bitmaps.conf

one achieves the goal of excluding bitmap fonts, which is good because
they don't scale when you try to print.  I'm not sure why this isn't
done by default.
