I must confess I haven't read your email in full, but why not just a desktop 
shortcut to:

env WINEPREFIX="/home/damon/.wine" wine "C:\Program Files\Stardock Games\Sins 
of a Solar Empire\Sins of a Solar Empire.exe"

YMMV.
