Is something with gnome getting in the way?  Some network manager junk?
(in case its not obvious, I don't do gnome, I start ppp with
$pon courier
[courier is the type of modem I have] )

What if you increase the debugging of ppp in one of the ppp options
file to find out what is sending the SIGHUP)?
