Are /usr, /var, /bin, /sbin, /etc, yada yada yada all on an
encrypted lvm partition?  That would be a problem if lvm "stops
working".

I would only encrypt and put on lvm the /home and any "data"
partitions.  Thus, if lvm "stops working" you still have a
functional system.
