BackupPC has worked very well for me on all 3 points. I'm currently
using it to backup Linux, FreeBSD, OS X (10.2.8) and Windows. 

Not only does it let you select mount points or files in the interface
and restore that selected portion, it will also let you restore them to
a new location or even a new server or download them to your computer in
tar or zip format.

It saved my life (well, several hours of it, anyway) when I accidentally
deleted all the mysql databases on my server. (Yes, it was a very stupid
mistake. Don't ask. :-)
