Snapshots don't work the way I thought, but oh well you live and learn.

I used pvmove after updating to LVM2. It worked like a charm.

After that it was copy the root onto the new raid1, modify lilo.conf to
match then run lilo.

Shut down, removed the 4 old disks, rebooted and it's up and running :)
