Can I go back to a previous package level ??

A working WINE environment is VITAL for my work. the latest wine 
packages upgrade has broken something and my Lotus Notes application crawls.

Is there a way to resume an older package (which I do not have on my apt 
cache anymore) ?

What is the way to downgrade a package to an older version (if I ever 
find it) ???
