In Woody that would be correct.
In Sarge it changes.
You have gnome-core for the basic desktop and gnome-desktop-environment which will pull in gnome-core, gnome-games and some other additional stuff.
My personal preference is to install gnome-core and get any additional stuff on an individual basis.
My package manager of choice is synaptic and my second choice is dselect. And for the quick grab or removal and the sometimes not so quick repair to use apt-get or dpkg directly.
Man is your friend (as in 'man dpkg' 'man apt-get' etc..) and so is:
