Hi J,
This sounds more like an OpenOffice question than a Debian one, but here
are some suggestions.
1. Download Openoffice from the openoffice site. Their versions are much
more upto date than the packages from Debian. Their current stable
release is 1.14 and they have a preview release of 2.0. I'm using 1.9.77
which works perfectly on Sarge 2.6.8-2-386. The openoffice installer
works quite well.
2. Once oo is installed go back to the OO site and download DicOOo.sxw
which you get here:
http://lingucomponent.openoffice.org/dictpack.html
3. Open the  .sxw file in OO and follow the directions to install the
languages of your choice.
4.In OO go into options and set your default language. You will notice
that in the language list, the languages you have installed have been
checked. BTW you need to close and restart OO after you have installed
the languages for the changes to show up.
5. When the spell checker starts make sure it's set to the language you
want.
6. Have fun.
