I wrote a guide that will get you through most of what you are looking for (it doesn't do virus scanning). Combining that with Google would probably get you to 100% though.

I wrote this when I was setting up my own system. I use Postfix and Cyrus, though I imagine adapting it for something like Courier wouldn't be too difficult.
