By design, Debian only initially installs a limited subset of
functionality, and then lets you install whatever packages you
want to install.

For example, mail servers don't need a GUI, so why should Debian
install a GUI if you don't need one?

Oh, wait, you *expect* a GUI on a mail server?  I foresee problems
ahead, since few people on this list expect (or want) a GUI on a 
mail server.
