I setup my interfaces file accourding yours, ran
# /etc/init.d/networking restart
and all was as expected -> it just works.

Maybe you didn't post the "right" interfaces file -> just attach it as
is.

Maybe you miss some essential package.

Oh, and don't mess with /etc/rc.boot (or something else), this would be
just an ugly hack.  /etc/network/interfaces is the config file for the
NICs, period. It has to work, everything else is just a bug.

When you boot with the "faulty" interfaces file what says ifconfig? what
says route?

Try
# ifup eth0 eth1 eth2
at the prompt. What's the output?
