If you really want to get your hands dirty, the 'Packet Filtering HOWTO'
on http://www.netfilter.org/ is pretty much the canonical user
documentation of iptables.  It's amazingly powerful; from the
description you gave above, it will take only about 5 lines to have an
extremely secure firewall (baring kernel bugs, of course).
