I had looked at specs for those before purchasing the 40GB ATA IV.  The
ATA IV was rated the quietest (20dB), but the others (the larger ATA IV
drives, I mean) were still very low (25dB, I think).  The ATA V drives
have the new serial ATA interface, which would be nice, but I didn't
feel the need to upgrade my mobo / buy a new controller just now.

In any case, if the question is which is the absolute quietest, the
ST340016A is the one (afaik).

I just got mine at home, so it's not as useful a data point I suppose,
but we've had a bunch of them in use at work for a bt longer, and
haven't had any trouble with them.  They're sitting in a noisy server
room full of fans =p .  When I finally took one out and ran it on my
desk (open case) was when I realized how quiet they really are.  I
couldn't tell if it was working or not!  So I thought one of these would
be good for my desktop at home, did some research, and found that these
are the quietest.
