Does it give you an error message like "No matching mailcap entry
found"? You might need to tell mutt where your mailcaps are, for
example:
~/.muttrc: set mailcap_path=~/.mailcap

My ~/.mailcap reads as follows:
~/.mailcap: application/pdf; gv %s
You could easily substitue xpdf in here of course.

I find the best way to view HTML in mutt is with:
~/.mailcap: text/html; links -dump %s; nameplate=%s.html; copiousoutput
Which converts it to text that you can view in your standard mutt viewer
and can be included in a reply et cetera.
