If spamassassin dies (use spamc instead to save memory, by the way),
then procmail recovers the mail, so you don't lose it. I'm not sure
offhand what happens if procmail dies; I imagine it depends on how your
MTA is set up. It should go into the MTA's queue for a later delivery
attempt, though.
