I doubt it is the IMAP server.  Currently top reports:

With my debian-user folder open.

$ ls -la ~/mail/debian-user

This is uw-imapd-ssl incidently.  More likely it is your email client and
the specific types of email you're getting (i.e. with big attachments like
you said) which is causing the bloat.

Btw IMAP fans, there is a new contender on the horizon--dovecot
(http://dovecot.procontrol.fi)  It looks quite promising and I'll be
making packages available shortly.
