I use cyrus which is very very light on resources, looks like it takes
2MB of memory for the initial connection, maybe a bit more for large
folders(5-10+k messages)
because of this, it is very fast as well.
I hear courier is good too though I haven't personally tried it yet.
cyrus is by no means a drop in replacement for other IMAP servers it
has a lot of unique stuff specific to cyrus which can make migration
to it a pain, but for me it's worth it.
